Have mercy y’all, we are on our third snow day!! We’re down here in Georgia so we had an inch or so of snow and then it didn’t get above freezing for two days. Thus, three ‘snow’ days. I use that term loosely! The kids stayed hungry after going in and out all day so they wanted pizza. So I made the next best thing…
Pizza Quesadillas the Low Carb Way!
Here’s the live Youtube of the concoction. Not sure if you can really call this a recipe since I winged it. I’m not known as a recipe writer necessarily but I sure do enjoy eating this way.
Sugar Free Pizza Sauce (you can buy this in most stores but this particular day, I didn’t have any so I found a few recipes and adapted to what I had on hand.)
One can of tomato paste
1/2 t. garlic powder
1/2 t. onion powder
1 heaping doonk stevia (I prefer the THM brand)
1/2 t. oregano
1 t. basil leaves (crushed)
some olive oil – 1-2 tsp.
a scant 1/3 c water
Mix all and use to spoon onto quesadillas as shown in video.
I use Mission Low Carb tortillas, parmesan cheese, mozzarella cheese, and hard salami. Y’all this is so easy! If I can make these on a snowed in day when the boys are starving, you can do this!! If you are following Trim Healthy Mama, these are considered an S meal.

That’s right. Those of us who eat this way have learned to listen to our bodies. Over the last 11 months, I’ve maintained at or below my goal weight eating this way.
