It’s meatloaf night!!
Our Aussie, Buddy, totally agrees it should be meatloaf night! Do you have certain nights of the week or month that are designated certain meals? You know, like Taco Tuesday? We usually don’t. I’m terrible at planning anything related to meals unless I have a huge crowd coming over. We had a bunch of boys at our house last weekend and I’m good at keeping boys full!
Back to meatloaf night! I’m a Trim Healthy Mama and that means I eat til I’m full. Thank God for that tonight! This recipe was amazing. I got it from page 214 of Trim Healthy Table. It’s the newest of the cookbooks I’ve gotten to stay on plan with THM. Just the other day, I got up and weighed myself (which I hardly ever do anymore) and I was 2 pounds under my goal weight! Praise God for this plan and my friends making me try it.
This meatloaf is easy and amazing!
I know, I know, it’s not the prettiest picture and doesn’t look like those amazing cooking videos and pictures you see on Pinterest. But y’all, this was good!!! I agree, don’t drain all the liquid off because you’re gonna wanna sop some of it up and drizzle it over your meatloaf when you serve it. Yum!
My son, the runner, had plenty of potatoes with it and the captain and I had the roasted broccoli and cauliflower on the side. Y’all, this is proof that THM doesn’t have to be complicated or difficult to do. Here, let me prove it to you. Watch this:
