She is constantly doing for others and this magnet on her car not only identifies her (since no one else has one unless she gave it to them), but it says exactly how we should go about life. One of these days she’s gonna start her Facebook page and #letteredbylisa will be her hashtag. Remember that cute wedding gift she made me?
Down here in the South, we are really good at loving people with food. If you have a baby, I’m bringing you food. Did someone die? Don’t worry, we’ll bring the food. Oh, you’re having surgery? Here comes the casserole train.
‘Tis the season for all sorts of things and just today I brought Lasagna Soup (see below) to someone who just had her third baby and it is a girl. So super sweet!!! I have to admit, I have NO original recipes! I do, however, have a very valuable tip for you. It’s called Plan to Eat.

Finally, as promised, here’s that Lasagna Soup recipe directly from my Plan to Eat account!
- 1 lb ground beef browned (or vegetarian crumble)
- 3 cups beef broth (or vegetable broth to make vegetarian)
- 4-5 cloves of garlic minced
- 1 TB dried parsley
- 1 TB dried basil
- 1⁄2 cup chopped onion
- one 28 oz can of diced tomatoes
- 6oz can of tomato paste
- 1 cup V8 (or any vegetable drink)
- 2 cups uncooked shell pasta
- 1⁄4 tsp pepper
- 1⁄4 tsp salt
- 1 cup water
- Optional topping- shredded cheese
First of all you want to brown the ground beef. The original recipe doesn’t say so but I don’t like my soup too greasy. Then I mixed together the can of tomatoes, and tomato paste in crockpot. Next add broth, beef, garlic, parsley, basil, onion, V8 and salt/pepper. Then I covered it and cook on LOW for 7-8 hours or on HIGH for 4-5 hours. When 30 minutes are left of cooking time, I added in the 1 cup of water and noodles. Stir to combine. Put lid back on and continue cooking for 30 minutes.
